A Tobin's Chicken Soup


Ok so here is my recipe for Chicken Soup
**Please note salt, pepper and garlic are to your taste and liking.
What you will need:
1 rotersire Chicken
2 Celery stalks(wash, cut down the middle then cut into pieces)
3-4 carrots(Peel, wash and cut into 1/2 in. pieces)
2-4 chicken bullion cubes
salt & pepper
2-3 garlic gloves(depending on size and your taste)
1/2 c-1 c of small pasta i like to use Pastina or Diatini
1/2 onion chopped

Directions: In a large stock pot or pasta pot if you have one(one that has the drainer in it) Place the whole chicken in and cover with water. Boil for almost 2 hours until the chicken pretty much falls off the bones. If you use a regular pot drain but save your water, this is the base for your broth, I like the past pot cause i can just pull the chicken out and it saves the water in the pan for me.

While your chicken is boiling chop all your veggies
When the chicken is done pull it out and start to pick all the good piece out, you don't want any bones or skin. Place all veggies in the pot and all chicken pieces. Salt and pepper add garlic and about 3 of the bullion cubes
Let this simmer for about 45mins till the carrots are ready.
When the carrots are ready you can add your pasta. Pastina only takes like 6 mins to cook.
Check your Broth for tastes add any more salt pepper, garlic or an extra bullion cube if needed.
Serve and enjoy


It takes a while but its worth it and pretty easy. Great for cold Sundays!!!
Plus you'll have lots of left overs! :)
